  • Danish blue cheese, 2 tablespoons (superbly crushed)
  • Freshly ground pepper
  • Small red onion, ¼ (sliced)

  1. Mix the sugar, vinegar, buttermilk, and mayonnaise in a small bowl.
  2. Add the blue cheese and season with pepper and kosher salt. Let sit for about thirty minutes in the fridge.
  3. Mix 2 tablespoons of water, sugar, vinegar, and balsamic vinegar in a small non-stick skillet.
  4. Cook for about five minutes, bring to a simmer, over medium heat. Stir it intermittently until thickened. Pour it into a bowl and then let cool for a few minutes.
